Stainless steel cookware sets and individual pots and pans purchased at the Bargain-Marts may or may not actually be bargains. Sure you will know the price you paid for the product, and how that price compares to the other Marts in town, but did you get a deal? The only way to know the value of your stainless steel cookware set purchase is to know the basics of cookware language. After you get the very basics of cookware terms, you can then make better purchasing choices. In this article we will discuss material thickness and how this improves quality. The information we will cover in this article includes stainless steel cookware, aluminum cookware and cast aluminum cookware whether purchased in sets or individual pots.

Sometimes the Marts due in fact have very good deals on quality cookware products. This may not always follow the brand name rules that at first come to mind. Most brand name products have different product lines, and these lines usually are of different level of quality. The good news is if you buy brand name products, even the low cost lines, you will be getting a product that is normally much better quality that the better or the best of the non-brand name cookware. The brand name producers do not want you to associate their name with low-quality products. If this association happens you will not be a repeat buyer of that brand. If you go into a store or even a web site and the manufacturer's name is not readily seen or advertised, the buyer should be cautious. Manufacturers of quality products want the consumer to know their name.

Now let get started on some cookware terms and the very basic knowledge you will need to know. As I mentioned above, we will begin with thickness of a pot or pan and the terms used. Metal thickness can be stated in inches (thousandths), millimeters, or gauge. Since many manufactures are now in Europe, they sell to Europe as well to the USA; those brands will be rated in MM or millimeters. Do not let metric measurements scare you; 1.0 MM is 0.0394 inches thick, a 0.5 MM is one half that thick or 0.0197 inches thick and 2.0 MM is twice that thickness or 0.0787 inches thick. The higher the MM rating the thicker the utensil will be. The next term for thickness is called gauge. Gauge can be hard to understand. The measurement in gauge works the reverse of normal thinking. The larger the number of gauge the resulting material will be thinner. A 16 gauge material is 1.3 MM thick, an 8 gauge material is 3.25 MM thick and a 4 gauge material is 5.18 MM thick.

We have now talked about all three measurement systems, inches thick in thousandths, millimeters and in gauge we will see where these units are used. If you are buying aluminum cookware or cast aluminum cookware the thickness will be in gauge. Most stamped aluminum cookware in the mass market is 10 gauge on fry pans and a thinner 12 gauge on saucepans. Better quality aluminum cookware would use a heavier 8 gauge on fry pans and 10 gauge on other pieces. Cast aluminum cookware is equivalent to 6 gauge. Consumers are moving up to more durable fry pans in recent years - either 6 gauge or a very heavy 4 gauge. Bargain basement lightweight fry pans with "generic" non-stick coatings are usually 12 gauge or 14 gauge. This is too thin to provide any length of time in service. The first time the heat is high under these fry pans the bottoms could warp, the contents burn or both. If you are buying stainless steel cookware the measurement of thickness will be in millimeters, (if the manufacturer is in the USA it may be listed in thousandths of an inch). The standard for top of range stainless steel cookware is 0.6 MM. Premium department store brands will have stainless steel cookware in the range of 0.7 MM to 1.0 MM thick. Low end stainless steel cookware is generally 0.5 MM thick. If you have the choice between two pots one is 2.59 MM thick (0.102 inches or 10 gauge) and the second is 5.18 MM thick (0.204 inches or 4 gauge) the best pot for even heat distribution is the 5.18 MM pot.

If you look at the bottom of your stainless steel cookware or your aluminum cookware and you see discolored, almost black shaded areas on the surface. If the pot does not set flat due to being warped, the likely cause is the utensil has had too much heat applied for its' thickness. Once the utensil is warped it will never be able to transfer heat uniformly.

This just goes to show that your stainless steel cookware material is not sloughing off in your food.

This makes for a more healthy alternative, than other types of cookware material.

Steel Vs Aluminum - Which Is Stronger?

The question of steel vs aluminum is one that has been asked for a very long time. The answer has to be only that it really depends on the project.

The question of which is stronger has come about due to a total misconception. This misconception has derived from the partial truths perpetuated that there are aluminum alloys that are as strong as steel and this simply is not the case. It is better to say rather that there are a few aluminum alloys that are stronger than some steel alloys.

6061 with T6 temper is one of the most used aluminum alloys and it is definitely stronger than some steel alloys pound for pound. The truth is that no matter what the strength of the aluminum alloy you can always find a steel alloy that will be stronger.

The fact of the matter is that other factors will determine whether you should rely on a steel or aluminum alloy. It depends mostly on the application. What you are going to use it for, is the deciding factor.

Let's look at some other comparisons between aluminum and steel. Look at the flexibility issue. There really is not a stiffness advantage here. Strength of a metal refers to the maximum load that it can handle without buckling. Stiffness is in reference to how much it will give before it breaks.

For instance a camera on a boom needs to be stable and steady. You need the metal to be stiff not flexible. And a tower needs to have a certain give to withstand high winds. Stiffness is quantified by the Modulus of elasticity and aluminum it is 10 million-pounds per square inch, whereas in steel it is easily 3x that amount.

As far as weight is concerned because of the thickness that the aluminum will need to be to be comparable in strength to the steel, it will weigh relatively the same.

Metal fatigue is usually not a consideration for a general structure made of steel. However if you are making engines and plates from this material it then becomes of greater importance. Aluminum is subject to fatigue failure. It will reach its endurance limit long before a steel hull, plate or engine. Today these too can be compensated for in the design of the engine, vessel or structure. Unlike steel aluminum has a very low rate of corrosion and this must be considered in the final analysis.

There you have it. The steel vs. aluminum saga will rage on but at least now you are aware of the facts, that it is a matter of suitability over strength.

Many people are confused when they first take up cooking. Besides learning the art and techniques of cooking, there is a confusing array of cookware. The simple fact is a good chef needs good cookware. Technique is meaningless without the proper tools.

The first thing you want to look at is the thickness of metal used to construct the pans. Thin metal burns food, it's impossible to cook with thin metal pans. They don't retain, and get way too hot to fast. The thicker and heavier your pans are the better. Thin pans also warp and bend from the heat of cooking giving them a very short life span.

Next you need to look at materials you have three main choices stainless steel, aluminum, and cast Iron. Stainless steel is the best but can be very expensive; it also tends to heat a bit unevenly. Aluminum is cheaper but requires more maintenance. You also need to avoid cooking certain types of food in aluminum pans. Aluminum will react to acids, not only ruining the taste of foods but also in some cases poisoning the food as well.

A great solution and the one I recommend is stainless steel clad aluminum; this cook ware combines all the best aspects of both materials. The ease of maintenance of stainless steel, combined with the lower cost and heat distribution of aluminum. Cast Iron is high maintenance but it is the only way to cook certain dishes, so you will need to buy at least one nice sized cast iron pan. Avoid non-stick pans; you will only need one small non-stick pan that will use to cook eggs. Other than that non-stick is a waste of money.

You will need one large stock pot, a few smaller pots for cooking pasta. A Dutch oven is one of the best things you will purchase for your kitchen. Look for a nice high quality set of 3 sauté pans. Find a nice quality small non-stick pan to cook eggs; you will only ever cook one egg at a time so use that to determine the size you need. I would purchase one medium and one large cast iron pans. Cast iron is great for cooking steaks and chops so keep this in mind when choosing your pans.

Technique is nothing without the proper cookware. Take the time to learn what you need and how you will use it. Don't fall for gimmicks; simple is better. With the proper cookware the quality of your cooking will improve drastically.

Steel Annealing: An Overview

Annealing is the process of heating metal to alter its strength and hardness. When properly annealed, metal becomes more ductile and free of stress, reducing its cold working properties. To accomplish this in steel, it is heated to temperature that is less than its melting point, held at that temperature for a period of time, and then slowly cooled. Austenitic process annealing and ferrite sub-critical annealing are perhaps the most common heat treatments for industrial steel.

Austenitic Process Annealing
Also known as normalizing, this process is conducted at a temperature above 720 degrees Celsius, depending on the metal's alloy. In each case, the intent is to soften the metal in a short period of time-a process that commonly involves the transition of pearlite into more ductile austenite. When observed microscopically, a cross section of pearlite steel that has been process annealed will show that austenite has replaced pearlite, causing a change in the metal's crystalline structure.

Ferrite Sub-critical Annealing
Conducted at a temperature below 720 degrees Celsius and lasting for an extended period of time, sub-critical annealing in the ferrite temperature range produces the softest steel. Unlike process annealing, sub-critical annealing heats steels until their iron carbide forms into globules, resulting in considerable ductility and stress relief. Seen at the microscope level, sub-critical annealed steels have a marbled appearance that represents increased ductility.

Atmospheres for Annealing
The atmosphere in which steels are annealed has a significant impact on decarburization, the process of decreasing carbon content in metal. Most steels are annealed in nitrogen / carbon atmospheres, which are naturally decarburizing to steels. To prevent carburization, some companies implement a Carboflex control system for furnaces that control nitrogen / hydrogen, nitrogen / natural gas, nitrogen / propane or a nitrogen / cracked methanol mixture that prevents carburization.

Preventing carburization in amateur work settings is difficult due to the difficulty of maintaining atmosphere mixtures in the absence of professional equipment. In most instances, Steel annealing that requires carburization management should be outsourced to professionals.

Furnaces for Annealing
Unlike heat treatments that focus on a section of a work piece, stainless steel annealing typically concentrates on the entire piece, hence the advantage of placing it in a furnace. With that said, annealing furnaces can range in size and function significantly. For example, short belt furnaces with small openings may be used to anneal jewelry, while multi-story furnaces are used for annealing industrial grade metal products such as steel stripping.

As with other types of metal work, both amateurs and professionals practice annealing. But there is a point when amateur work, however good, is inappropriate. If a work piece will impact people's safety when it is implemented in a final assembly, a professional should anneal it. Although the purpose of annealing is to soften metal, making it too soft-or leaving it too hard-could have critical consequences.
